Cool walnut salad requires no heat to make for guests

Looking for something to do to get out of the heat? Join others at the Denton Community Theatre’s production of the Broadway hit musical Hairspray this weekend and next.

It calls for a big cast, big hair and big fun as overweight and outspoken teen Tracy Turnblad aspires to be a dancer.

Call 940-382-1915 for tickets.

Today’s recipe requires no heating the stove to prepare.

The recipe comes from Peggy Capps; it will be served at the first book review of the fall at the Denton Woman’s Club in September.

Parmesan walnut salad with poppy seed dressing

•  4 cups field greens

•  1 cup walnuts, chopped coarsely

•  1/2 cup dried cranberries

•  2 ounces shaved Parmesan cheese, bought or shaved with potato peeler

Poppy seed vinaigrette

•  1 cup mayonnaise

•  1/4 cup apple cider vinegar

•  1/2 cup honey

•  2 tablespoons water

•  1 tablespoon poppy seeds

Mix greens, walnuts, dried cranberries and Parmesan in salad bowl.

Whisk dressing ingredients in a separate bowl. Drizzle dressing on salad at serving time.

Serves six to eight people. Makes more dressing than you need.

Put in refrigerator for later use.
