Salad can be both lively and light

Attention, all seniors: The city of Denton, Texas Woman’s University, the University of North Texas and various nonprofit agencies are uniting to offer the seniors of Denton an opportunity to “Age Well, Live Well” with a free Senior Fitness Assessment and Healthy Aging Fair at the Kitty Magee Arena in Pioneer Hall on the TWU campus Saturday from 10 a.m. to 3 p.m. The goal is to make Denton the healthiest place in the nation!

Parking is free, but each person is requested to bring a donation of two cans of food.

One of the most spectacular evenings in Denton is coming up on Oct. 14, when UNT’s College of Music presents its annual gala concert and dinner at the Murchison Performing Arts Center. The program, titled “Symphony Meets Jazz,” features the fabulous UNT Symphony Orchestra, with the A Cappella Choir, Jazz Singers and some of the most talented student and faculty soloists.

Last year’s concert was memorable, with people coming from as far as Abilene to attend, and this year promises to be even better. So call for tickets early as it likely will be a sellout.

Today’s recipe, from Peggy Capps, was served at the Denton Woman’s Club Book Review. It fits right into our goal of more healthy eating if you use light mayonnaise.


Parmesan Walnut Salad with Poppy Seed Vinaigrette

•  4 cups field greens

•  1 cup walnuts

•  1/2 cup dried cranberries

•  2 ounces shaved Parmesan cheese


•  1 cup mayonnaise

•  1/4 cup apple cider vinegar

•  1/2 cup honey

•  2 tablespoons water

•  1 tablespoon poppy seeds

Toss together greens, walnuts, dried cranberries and Parmesan in salad bowl. In a separate bowl, whisk dressing ingredients. Drizzle dressing on salad just before serving. Serves at least eight.

Note: This dressing recipe makes more than needed, so refrigerate the rest to use later.
