Recipe for a delectably rich cake that won’t tip the scale

All this weekend, the whole family can be entertained at the annual Texas Storytelling Festival.

Because of the torrential rains last year, this year’s festival, put on by Denton’s own Tejas Story­telling Associ­ation, has been moved inside to Hubbard Hall on the Texas Woman’s University campus.

I’m looking forward to the new location because it will mean less walking.

There should be plenty of room for parking, too.

The schedule of events, which started Thursday night with Ghost Tales, can be accessed on­line at www.tejasstorytelling.com.

There will be three nationally known storytellers, several regional storytellers and even youth storytellers, which I always enjoy.

I have another reduced-calorie recipe today for you from dietitian Ann Marie Afflerbach.

Although she calls it Neiman-Marcus Cake, it is similar to the yummy Cream Cheese Cookies in the Denton Woman’s Club Cook­book, page 432, which I have often made.

I plan to make some of these for the bake sale booth at the upcoming Denton Arts & Jazz Festival.

There’s never a dull moment in this town.

Speaking of dull, that would be me, because several readers called to question the amount of breadcrumbs in the Stuffed Eggplant recipe two weeks ago. The amount is 1/4 cups dried breadcrumbs — very important to the recipe.

 

Lower Fat Neiman-Marcus Cake

* 1 box lemon cake mix

* 4 egg whites

* 1/2 stick margarine, softened

* 8 ounces low-fat cream cheese

* 4 cups powdered sugar

Preheat oven to 350 degrees. Grease a 9-by-13-inch baking dish with nonstick spray. In a large bowl, mix the cake mix, 2 egg whites and softened margarine well. Batter will be stiff. Spread the cake batter in the bottom of the prepared baking dish.

Mix cream cheese, the remaining egg whites and the powdered sugar in another bowl. Pour on top of the cake mixture.

Bake for 35 minutes, or until the cream cheese is set (it shouldn’t jiggle). Cut in small squares because this is fairly rich in taste.

Ann Marie’s comment: This recipe tastes like lemon bars — great for spring.
