Roadhouse fare to squawk about

Industrial Street’s nightlife lineup has climbed a notch, with Rooster’s Roadhouse recently settled between Dan’s Silverleaf and Fuzzy’s Taco Shop.
The two restaurants aren’t competing; they are coordinating.
“The more there is, the better it is for everybody,” said Alan Pierce, who co-owns the restaurant with Morgan Hull and Johnny Law. “Just like with Fry Street, with all their different businesses there, we hope to get the same kind of thing. We feel that this is going to be a very good place to be.”
Pierce said he and his partners had been seeking restaurant property for about a year, and they recognized a favorable look and feel in the Industrial Street space, which housed Central Freight Lines and a feed store in times past.
And Pierce himself had some involvement with the development of Fuzzy’s, having sold that restaurant some equipment.
“We spoke with Jim Blanton, the owner of the property, and after a couple of months of research and due diligence, we decided it would be a good space,” Pierce said.
The business opened its doors on June 16.
One of the house hits thus far is the Chez Bubba Burger, which is topped with sauteed mushrooms, provolone cheese and a fried egg. The menu also offers Redneck Sushi, certainly not available anywhere else in Denton. It’s brisket, cheese and sweet hot pickles wrapped in a tortilla, served with chopsticks.
The more common Rooster’s menu staples are burgers, sandwiches and pit-smoked barbecue. The barbecue beef is Angus certified, seasoned with salt and pepper, and it’s available by the pound for catering — or for gluttony.
The restaurant offers a variety of fries, but also produces homemade potato chips twice daily. Those chips are prominently featured in the Baby Burger Salad — a typical salad up to a certain point, until it’s piled with the chips and a bite-sized burger on top, like a cherry. The bar doesn’t have a happy hour, but does offer beer bucket specials.
Most restaurants advertise whatever praise they get, but Rooster’s, with charm, has a complaint letter framed and mounted near the front door. The letter, dated July 10, features a header, signature and impeccable grammar. The writer complains his Rooster’s waitress didn’t give her first name — and that though everyone else at his table was offered a drink refill, he was not.
The writer insists that, though he cannot speak for his friends, he shall not return.
“I’m sorry he had a bad experience,” Pierce said. “You can’t please everybody, and we understand that, but at the same time, I kind of saw the humor in it. And I hope we don’t have many more letters, at least in that regard.”
