Sweet beginnings for self-serve shop: Yogurt Story opens in Denton

12:16 AM CDT on Saturday, March 21, 2009

By Candace Carlisle / Staff Writer

As a mother and her brood walked through the doors at Yogurt Story, a new self-serve frozen yogurt shop, Paul Yun was ready to facilitate a choose-your-own-adventure saga for each of them.

“Here are some sample cups to find the flavor you like,” Yun said.

Yun said his store is like a story that begins with a sample cup and ends with someone’s favorite assortment of different flavors of frozen yogurt and toppings in a large cup.

Since opening the store with his wife, Helen, last week, Yun has seen a steady increase in customers creating their own taste sensations.

The business, located around the corner from Best Buy, is the second restaurant to open this year in the Denton Crossing shopping center off Loop 288; Palio’s Pizza Cafe opened in January.

Yun said he knows of only about 10 self-serve frozen yogurt shops in Texas, and the trend will likely grow, he said.

Frozen yogurt is much healthier than ice cream, with only 90 calories per serving and no fat, he said.

“Americans like ice cream, but they feel guilty. Frozen yogurt doesn’t give you that guilt,” Paul Yun said.

The shop has 12 different flavors of frozen yogurt, including New York cheesecake, chocolate, sugar-free blueberry and green tea tart.

David and Annie Fisher of Shady Shores took their 7-year-old daughter, Katelyn, to the shop for the first time Friday afternoon, while she was on spring break. Both parents were surprised to learn the frozen yogurt was fat-free, saying it is creamy, like ice cream.

“It doesn’t taste ‘diety.’ It tastes delicious,” David Fisher said.

And customers seem to like the opportunity to mix and match flavors of frozen yogurt with fresh fruit and candy toppings.

David Fisher put a lot of fresh fruit, including blackberries, on top of his peanut butter- and vanilla-flavored frozen yogurt creation. His daughter, Katelyn, gravitated toward M&M sprinkles, “mint thingies” and crushed Oreos on her chocolate treat.

“I like that I can put stuff on it [her chocolate frozen yogurt],” Katelyn said.

David Fisher’s only complaint was a “brain freeze” from the frozen dessert, which Katelyn said she had already experienced.

Paul, Helen and a 15-year-old son work at the store, with only one other evening employee. Since the store is self-serve, only one employee is needed to measure the cups and man the register, Paul Yun said.

Yun said he is already considering extending the shop’s hours to cater to college students.

If Yogurt Story works, Yun said, he would like to develop the frozen yogurt store into a franchise. But for now, he says, it’s comforting to see happy customers walk out of the shop, their own yogurt story complete.

“Once the customers get it, they like it, and I enjoy seeing customers happy with the concept,” he said.
