Easy to assemble Tomato-Basil Soup

Dallas is gaga over a certain bistro's tomato-basil soup. This version, which uses just two ingredients, produces a pretty darn close copy.

HEAT

2 (14.5-ounce) cans of diced tomatoes with basil, garlic and oregano over low heat until bubbling.

ADD

8 ounces of cream cheese, diced. Simmer until most of the cheese has melted. Remove from heat.

USE

a hand-held blender to purée the mixture in the pan. Makes 2 entrée or 4 appetizer portions.
