Mom's Amazing Meatloaf

Growing up, I often boasted that my mom made the best meatloaf. And since Mother's Day is such a nostalgic time, I'm preparing the original recipe in her honor.

Although it's quick to mix up, I'm the first to admit that, with more than an hour of baking time, this isn't typical desperation weeknight fare. (That's the reason we did a quick version for individual skillet meatloaves years ago. You can find that recipe on our Web site at www.desperationdinners.com.)

But back to Mom. This is her special day, after all, and she deserves the best. The whole family will love it, too.

And there's a desperate bonus: Leftovers make amazing sandwiches for Monday night. Sunday lunch and Monday's dinner, all in one: Mom sure knows best!

2 slices hearty whole-wheat bread (2 cups of bread cubes)
2 eggs
1 large onion (about 1 cup chopped)
½ cup low-fat or whole milk
½ cup grated parmesan cheese
3 tablespoons finely chopped fresh parsley
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
½ teaspoon salt
¼ teaspoon black pepper
1 ½ pounds 93 percent fat-free ground beef

The long baking time is worth it for Mom's Amazing Meatloaf because it will keep her from cooking for a couple of days.

Preheat oven to 325 F. Toast the bread and cube it. Set it aside. Break the eggs into a large mixing bowl and slightly beat. Finely chop the onion, adding it to the bowl as you chop. Add the milk, parmesan, parsley, mustard, Worcestershire sauce, salt, pepper and reserved bread cubes and mix well.

Crumble the ground meat over the mixture and then fold together using your hands. (Wash your hands well before and after handling the meat.)

Spray a 13x9-inch glass baking dish with nonstick cooking spray. Transfer the meat into the baking dish and form it into a long loaf. Pat the mixture down to about 3 inches high. Pour the ketchup over the loaf. (Use more, if necessary, to cover the entire loaf.)

Bake for 1 hour and 15 minutes (for medium) or until done to personal preference.
