Spinach and Strawberry Salad

1 clove garlic, minced
1 teaspoon salt
¼ cup freshly squeezed lemon juice
2 tablespoons champagne wine vinegar
½ teaspoon lemon zest
1/8 teaspoon ground black pepper
¾ cup extra-virgin olive oil
6 cups spinach, rinsed well and stems removed
2 cups fresh strawberries, rinsed, hulled and halved
½ cup honey-roasted walnuts or almonds

Mince garlic and mash to a paste with salt. In a large bowl, whisk together garlic paste, lemon juice, vinegar, lemon zest and pepper. Whisk in oil slowly until emulsified. Toss in spinach, strawberries and walnuts, mixing well. Serve immediately.
