What is macerating?

Anyone who has watched an old film with W.C. Fields injecting an orange with spirits has got the basic idea of maceration.
Macerating means to soak food, usually fruit, in liquid to absorb the flavor. The liquid is usually a liqueur or spirit such as brandy or rum.
Prepare the fruit, add a few tablespoons of the liquid and allow to soak. Try strawberries with orange liqueur or fresh pineapple with rum. From there let your imagination take hold.
