How to use leftover cheese rind

What to do with a Parmigiano-Reggiano rind? The first thing cooks think of is throwing it into an Italian soup to add flavor and depth. That's a great start.

Use Parmigiano-Reggiano rind to flavor soups, stews and braised meats.

You also can add it to stews and while braising meats whose seasonings are in the Italian spectrum. Anything in that family of flavors – beef or chicken stock, onions, garlic, tomatoes, mushrooms – would benefit from cooking with a Parmigiano rind thrown in. You also could put it into a tomato-based pasta sauce. If the sauce is purchased in a jar, let it simmer for 15 minutes or so. Then discard the rind and use the sauce.
