With its crusty brown exterior, Brun-Uusto Brunkow's Baked Cheese with Jalapeño looks tempting before you tear into the package. It's an American rendition of "bread cheese," or juustoleipa, from Finland and Sweden. Think about thick cheese topping a pizza, how it's denser, chewier and has a bronze finish: Brun-Uusto mimics that. As for the jalapeño, it adds negligible heat. But, hey, this comes from Wisconsin, so what do you expect? Solution: Add more jalapeños to taste. Serve Brun-Uusto warm as an appetizer, in a sandwich, in an omelet. Use your imagination. We found it at Central Market for $11.99 a pound, and most packages are about half a pound.
